Mint Lemonade
Makes 3 cups; about 4 servings
For lemonade
- 1/2 cup sugar
- 1/4 cup hot water
- 1/2 cup fresh lemon juice (from 4 lemons)
For mint lemonade
(2 servings)
- About 12 (3 1/2 cups) ice cubes
- 1 1/2 cups lemonade, plus more if needed
- 6 to 7 sprigs of fresh mint, plus more for garnish
We had lemon trees and mint all over our ranch when I was a kid. I don’t remember when I tasted the two together for the first time, but since then I’ve never liked lemonade any other way. For kids or anyone not drinking alcohol, it’s a fabulously festive and beautiful nonalcoholic treat. Or add a shot of rum or vodka to each glass and make a cocktail out of it!
Instructions
1. To prepare the lemonade, place the sugar and hot water in a 2-quart container. Close tightly and shake until the sugar is dissolved. Add the lemon juice and enough cold water to make 3 cups total. Shake until well combined.
2. To make 2 servings of mint lemonade, place the ice in a blender—it should fill the blender about halfway. Pour over the lemonade. Pull the leaves off the mint and add to the blender. Puree until well blended and slushy. If too liquidy, add more ice and puree; if too slushy, add a little more lemonade and puree until well blended.
3. Pour into two 12-ounce glasses. Garnish each with a mint sprig and serve immediately.

About the Author
Eva Longoria is best known for her award-winning role as Gabrielle Solis on ABC’s mega-hit Desperate Housewives. Her extensive charity work earned her the Hollywood Reporter’s Philanthropist of the Year award in 2009. Eva is the owner, with Todd English, of Beso, an eatery in Hollywood and Las Vegas that features upscale contemporary steakhouse cuisine with a Latin flair. She is a graduate of Texas A&M–Kingsville and lives in California and Texas.

The must have cookbook

As a Mexican I found Eva's recipes to be a great selection of Mexican dishes, easy to make and as she says, to enjoy with family and friends. We have bought a book for each one of our children, so that when they spend a day with friends they can impress them with these delicious Mexican recipes.

Oh my...this cookbook is great. Being Hispanic, growing up in Texas, these recipes remind me of my childhood. As Eva describes each recipe with love they are amazing.
My favorite is the "Fideo con Pollo" ..
Buy this book...learn the recipes..you will never good out for Mexican Food again !!

I couldn't wait to get this cookbook, and I was not disappointed! The first recipe I made was , The "Hungarian Paprika Chicken". It was delicious! This will be one that I make often.(I might try cream cheese instead of sour cream next time, just to try a different version)
I love the stories that Eva tells in this book too, I have to say, that this is the first time I have read a "cookbook" cover to cover in one sitting! I'm glad I decided against the Kindle version, it just wouldn't have been the same. 10 stars -this is a must have!!!Eva's Kitchen: Cooking with Love for Family and Friends
